Sweet Potato in Salad

Sweet Potato (Yam)

Try eating Sweet Potato raw by grating and adding to salad.

Raw gives greatest health and energy benefits.

Sweet Potato Salad Example: Grated sweet potato, diced tomato, diced cucumber, chopped parsley, sprouting mung beans with dressing of extra virgin olive oil and vinegar (Balsamic is good).

Or cooked, for example:

Can be parboiled, then roast in the oven (as roast potato).

Or boiled, eaten that way or mashed with butter. Consider mixed mashed potato with sweet potato.

Some Benefits: Rich in beta carotene, a major anti oxidant, contain vitamins -C and B-complex, iron and phosphorous. Sweet potatoes are excellent immunity boosters.
The fibre / roughage helps water retention so the body can maintain water balance. Sweet potato protects arteries from hardening.
