Recipe - Aloo Soa - Potatoes with Dill




In the beginning of winter we get a lot of herbs and leafy vegetables here in India. Dill is one of those herbs and apart from being used in small amounts for example in salad, it is also the main ingredient for a very delicious main vegetable dish: aloo soa, potatoes with dill. Great in taste, this dish is also good for your health. Here is the recipe for this great combination!
Aloo Soa - Ayurvedic Potatoes with Dill

Use dill not only as a herb in salad but enjoy its full taste in cooked form in this delicious and healthy dish with potatoes!

Ingredients

300 g Dill
500 g Potatoes
2 tbsp Olive Oil
½ tsp Cumin Seeds
½ tsp Garam Masala
½ tsp Coriander
1/4 tsp Turmeric
1 tsp Fresh Ginger in small Pieces
1/4 tsp Turmeric
Salt according to taste
How to make Aloo Soa

First of all you wash your dill. Depending on where you bought your dill, you may have to still spend some time on preparing it properly. If you got the complete leaves with the stem, you need to remove the thick, lower part of it. After that you cut the remaining dill into small pieces of about a centimeter’s length. Wash and peel the potatoes.

Heat up the oil in a deep pan or wok. When it is hot, you add cumin, garam masala, coriander, turmeric and finally the freshly cut ginger pieces into the oil and roast them for a little while. When the spices have developed their aroma nicely, you can add the potatoes and some salt. You will need to fry them with the spices for about five minutes. You can put a lid in the beginning but take care to stir regularly so that the potatoes don’t stick to your pan.

After five minutes, your potatoes will already be a little bit soft and you can add the dill into the pan. Mix it nicely. Stirring from time to time, it will take the dish only another ten minutes until the potatoes are completely soft. Then it is ready and you can serve it – deliciously juicy from the dill and very healthy on top of it!
Ayurvedic Benefits

Dill is known to be rich in calcium, magnesium and iron and thus a very valuable source of minerals that keeps bones, nails and hair healthy and the blood strong. Apart from that, it also pacifies all three doshas Vata, Pitta and Kapha.

While potatoes increase Vata in the body, we have added ginger into the dish, which reduces that dosha and thus creates a fully balanced and balancing dish. Enjoy!
